Dairy Free Clafoutis aux Cerises 

Until recently, I too, had no idea what clafoutis was.  But I saw something on a cooking show and thought ooooooh!  I want that.  It is a traditional French dessert, made with cream, containing flour.  It is a baked custard, or flan, with fruit.  I've changed it up to make it both gluten and dairy free.  I hope you like it.  

 

This dessert is very easy to make, and can be served warm or cold.  My husband loves it.  I've added almonds and almond flavouring to it, but feel free to use other berries or fruits, other flavours to make it your own.  We've tried lemon raspberry too, and it was equally delicious.

 

 

Dairy Free Clafoutis aux Cerises

 

Frozen pitted cherries (or fresh, if you feel like pitting them yourself)

3 large eggs

1/2 cup canned coconut milk

1/2 cup non dairy milk of your choice

1/2 cup white rice flour

1/2 cup tapioca starch

1 TBSP potato starch or corn starch

1 tsp pure almond extract

sliced almonds to garnish

 

 

Butter a casserole dish or corning ware dish.  Something bigger than a pie plate, yet smaller than a lasagna dish...  you know, the perfect size?  I don't know how else to describe this.  If you know what this size is called, please let me know in the comments!

 

Spread cherries along the bottom of the prepared dish so that they aren't touching each other, but the dish is essentially almost covered.  Whisk up your eggs and coconut milk, milk and almond extract.  Then whisk in your flours.  Pour over top of your cherries.  Sprinkle the sliced almonds over top, and bake 35-40 minutes in a 350F oven.  Until it doesn't jiggle much anymore.  

 

Serve with a generous dusting of powdered sugar.  You should be able to slice it and serve it with a spatula.
