Sugar Cookies

It's almost Christmas!!  I can't wait.  The food is going to be so good!  I just love this time of year for a lot of reasons, but one of my favourite things is sharing food with those I love.  One of my love languages is most definitely food.

This year, one of the things I'm most grateful for is my new job.  I work as a receptionist for an optometrist who specializes in vision development and rehabilitation.  It is so interesting how he can improve the quality of life for young children who are struggling to see, struggling to understand what they are seeing, and just struggling with life in general because of this.  And then, to see those with concussion injuries and the struggles they have, and to see them improve through appropriate therapy.  It is such a great place, full of hope and kindness.

We had an open house yesterday, hosting patients, former patients, and other professionals who work with these lovely people with the same hope and optimism of improvement and better days to come.  I made cookies...  because I love cookies, and I love to have something I can safely eat at these things.  Did I mention that half the staff here are also gluten free?  It's so weird to not be the odd one...  those gluten eaters might feel a bit awkward sometimes!  So another bonus from working here- I have a new group of people to taste test my new recipes.  Shh...  they don't know they're my testers....  

Sugar Cookies

1 cup earth balance buttery sticks (or real butter)

1 1/2 cups granulated sugar

1 TBSP vanilla

2 large eggs

2 cups white rice flour

1 cup potato starch

1 cup tapioca starch

1 tsp xanthan gum

2 tsp cream of tartar

1 tsp baking soda

1/2 tsp salt

In mixer bowl, cream butter and sugar together until light and fluffy.  Add in vanilla and eggs and beat until fluffy again.

In a small bowl, combine dry ingredients and mix together with a whisk or fork.  Add to mixer in two additions, mixing thoroughly on low speed.

Place a sheet of parchment on your counter, cover with plastic wrap (we did this for pie, and for the cinnamon rolls). Divide the dough in half, and place half of it on the plastic wrap.  Cover with plastic wrap and roll out to 1/4 inch thickness.  Cut with your favourite cookie cutter, and using a frosting spatula or other thin metal spatula, gently lift the cookies off the plastic wrap and place onto parchment lined baking sheet.  Bake in 375F preheated oven 8-9 minutes depending on the cookie size.  Make sure you leave plenty of room between the cookies, as they spread quite a bit.  My 2 inch circles made 3 inch cookies!  Cool on baking sheet at least 5 minutes before moving to wire rack.  Once they are cool, frost with your favourite frosting.  Decorate as you wish!   Makes about 3 dozen 3 inch cookies.
